Indian rice salad with currants and almonds

Elevate traditional Indian rice salad with crunchy almonds for a delicious twist!
Ingredients:
  • 150.00 gm basmati rice
  • 100g wild rice
  • 165.00 ml slivered almonds
  • 165.00 ml Greek Style Yoghurt
  • 30.00 ml lime pickle
  • 82.50 ml currants
  • 250.00 ml chopped fresh coriander leaves
Instructions:
  • Prepare the basmati rice and wild rice according to the package instructions. Spread them out on a tray and let them cool.
  • Heat a frying pan over medium-high heat. Toast almonds for 3 to 4 minutes until golden. Mix yoghurt, pickle, and 1 tablespoon of cold water in a bowl.
  • Set aside 1 tablespoon each of almonds, currants, and coriander. Combine the rest of the almonds, currants, coriander, rice, and yogurt in a bowl. Gently mix together and top with the reserved almonds, currants, and coriander before serving.
