Tender prawns in a flavorful coconut-tomato curry, perfect over hot rice for a delicious meal.
Ingredients:
  • 2 tablespoons peanut oil
  • 0.5 sweet onion, minced
  • 2 cloves garlic, chopped
  • 1.5 teaspoons ground turmeric
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 0.5 teaspoon red chili powder
  • 1 (14.5 ounce) can chopped tomatoes
  • 1 (14 ounce) can coconut milk
  • 1 pound cooked and peeled shrimp
  • 2 tablespoons chopped fresh cilantro
Instructions:
  • Prepare all ingredients.
  • Warm peanut oil in a large skillet over medium heat. Sauté onion until translucent, stirring occasionally, for about 5 minutes. Remove skillet from heat and let cool for about 2 minutes before continuing.
  • In a skillet, combine garlic, turmeric, ginger, cumin, paprika, and chile powder with the onion. Cook over low heat to enhance flavors for about 30 seconds. Add tomatoes, coconut milk, and salt. Bring to a boil for 1 minute, then simmer on low heat for 10 minutes, stirring occasionally.
  • Add the succulent shrimp and fragrant cilantro to the mixture, then gently simmer until the shrimp is heated through, which should take about a minute.
  • Serve and savor every bite!
