Colorful rice bursting with delightful flavors and diverse textures.
Ingredients:
  • 500.00 gm basmati rice
  • 1/2 tsp saffron threads
  • 57.50 gm vegetable oil
  • 1 large brown onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 2cm piece ginger, peeled, grated
  • 1 cinnamon stick, halved
  • 1 star anise
  • 4 cardamom pods, lightly crushed
  • 1020.00 gm salt reduced chicken style liquid stock
  • pinch of ground cloves
  • 1/2 tsp garam masala
  • 85.00 gm sultanas
  • 125.00 ml frozen peas, slightly thawed
  • 2 hard-boiled eggs, quartered, to serve
  • 62.50 ml roasted cashews, to serve
Instructions:
  • Rinse rice under cold water until clear. Soak in a bowl of cold water for 20 minutes. Drain in a colander for 30 minutes until dry. Mix saffron with 1 tablespoon hot water in a small bowl.
  • In a large saucepan over medium heat, sauté onion and garlic in oil until soft, about 4 to 5 minutes, stirring often.
  • Infuse the flavors with ginger, cinnamon stick, star anise, and cardamom pods for 1 minute. Stir in the rice and cook for 5 minutes, making sure to stir constantly.
  • As the stock heats up in a saucepan, pour the boiling stock along with the saffron mixture, cloves, garam masala, and sultanas into the rice. Stir well to mix everything together. Once it starts boiling, lower the heat, cover with a lid, and let it cook for 18 minutes without peeking. After cooking, add peas and gently mix with a fork. Cover and let it sit for 5 minutes. Fluff the rice with a fork, transfer to a serving bowl, and garnish with egg and fried cashews before serving. Enjoy!
