Indulgent chocolate mousse infused with brandy, irresistible to all.
Ingredients:
  • 75g good-quality dark chocolate, coarsely chopped
  • 30.00 ml brandy
  • 1 egg, separated
  • 80ml (1/3 cup) thickened cream
Instructions:
  • In a small heatproof bowl, gently melt the chocolate and brandy over simmering water, ensuring the bowl doesn’t touch the water. Use a metal spoon to stir occasionally until smooth. Remove from heat and let it cool for 3 minutes. Mix in the egg yolk until fully combined.
  • Whip cream in a small bowl using an electric beater until soft peaks form. Gently fold the whipped cream into the chocolate mixture using a metal spoon until just combined.
  • Beat egg white with an electric beater until soft peaks form. Gently fold into chocolate mixture until combined. Divide mixture into espresso cups, cover with plastic wrap, and chill in the fridge for 3 hours until set.
