Quick and nutritious smoked salmon quiches with peas and eggs - ideal for a light lunch or picnic in just 40 minutes!
Ingredients:
  • 2 sheets filo pastry
  • 150g (1 cup) frozen baby peas
  • 1 bunch asparagus, trimmed, cut into 3cm lengths
  • 6 eggs
  • 80g onion and chives cottage cheese
  • 100g smoked salmon, chopped
  • 70g (1/3 cup) semi-dried tomatoes, chopped
  • 40.00 ml chopped fresh chives
  • 40.00 ml chopped fresh mint leaves
  • 100g baby rocket
  • 200g grape tomatoes, halved
  • 1 tablesoon balsamic vinegar
Instructions:
  • - Preheat your oven to 180C/160C fan forced. - Grease four 250ml (1 cup) muffin pans or ovenproof ramekins with oil. - Cut each pastry sheet into 6 squares. - Lightly spray oil on 3 squares, stack them on top of each other, and use to line the base and side of 1 muffin pan or ramekin. Repeat for the rest of the pastry and pans/ramekins.
  • Blanch the peas and asparagus in boiling water for just 1 minute, then drain and rinse under cold water.
  • In a spacious bowl, combine the eggs and cottage cheese until smooth. Gently mix in the salmon, semi-dried tomatoes, chives, and mint. Don't forget to season with your favorite spices.
  • Evenly distribute the asparagus and peas into the pastry cases. Pour the egg mixture on top. Bake until golden and set, about 20 minutes. Let it cool for 5 minutes before serving.
  • Toss the arugula and grape tomatoes with the balsamic dressing.
  • Top the quiches with the salad before serving.
