Ingredients:
  • Melted butter, to grease
  • 4 sheets filo pastry
  • 20g (1 tbsp) butter, melted
  • 27.20 gm sultanas
  • 40.00 ml currants
  • 40.00 ml chopped dried peaches
  • 40.00 ml chopped pistachio kernels
  • 375ml (1 1/2 cups) reduced-fat milk
  • 2 eggs, at room temperature
  • 60g (1/4 cup) caster sugar
  • 2.50 gm ground cinnamon
  • Pinch of ground nutmeg
Instructions:
  • Preheat oven to 200°C. Lightly grease 4 round, shallow 250ml (1-cup) ovenproof dishes with melted butter and place them on a baking tray.
  • Quarter the filo pastry sheets and gently brush them with melted butter. Gently crumple 4 of the quartered pieces and place them in the greased dishes. Sprinkle with a third each of sultanas, currants, peaches, and pistachio kernels. Repeat layering with remaining ingredients to create 3 layers, ending with a layer of pastry.
  • Bake in a piping hot oven until the pastry turns golden and crisp, about 7 minutes.
  • In a large jug, whisk together the milk, eggs, sugar, cinnamon, and nutmeg until well combined.
  • Carefully pour the milk mixture over the pastry, then bake in the oven for an additional 10 minutes until golden and fully set. Serve hot.
