Ingredients:
  • 800g premium beef mince
  • 425g can Mexe-beans
  • 35g pkt taco seasoning mix
  • 400g can diced tomatoes
  • 230g pkt corn chips
  • 80g cheddar cheese
  • 3 tomatoes, chopped
  • 1/2 red onion, finely chopped
  • 82.50 ml chopped fresh coriander
  • 2 avocados
  • Dollop of sour cream
Instructions:
  • In a hot frying pan, sizzle beef mince with olive oil. Stir in Mexe-beans, taco seasoning mix, and diced tomatoes. Let it simmer for 5-8 minutes.
  • Preheat the grill until it's nice and hot. Spread the beef mixture evenly among 4 heatproof dishes. Sprinkle corn chips on top, followed by grated cheddar. Grill for 1-2 minutes until the cheese is melted and bubbly.
  • Mix together juicy tomatoes, vibrant red onion, and aromatic coriander. Crush ripe avocados. Serve with a spoonful of tangy sour cream, mashed avocado, and zesty tomato salsa.
