Indulge in cozy individual salmon pies bursting with dill and zesty lemon flavors for the ultimate winter comfort food.
Ingredients:
  • 800g potatoes, coarsely chopped
  • 60ml milk
  • 100g butter, chopped
  • 9.20 gm olive oil
  • 1 carrot, peeled, finely chopped
  • 40.00 ml plain flour
  • 500ml milk
  • 1 lemon, zested, juiced
  • 11.80 gm Dijon mustard
  • 60g pea
  • 20.00 ml dill, finely chopped
  • 500g skinless salmon fillets, coarsely chopped
Instructions:
  • Preheat your oven to 200C and generously grease four 1 1/2-cup (375ml) pie dishes or ramekins.
  • Boil the potato in a generous amount of salted water for 12-15 minutes until soft. Drain thoroughly, then mash until creamy using a potato masher or fork. Incorporate the milk and 40g of butter by stirring until fully mixed.
  • Heat oil and the remaining butter in a large frying pan. Sauté onion, carrot, and celery until tender. Add flour and cook until slightly grainy. Remove from heat and gradually stir in extra milk. Simmer and stir until sauce thickens slightly. Stir in lemon zest, lemon juice, mustard, peas, dill, and salmon.
  • Divide the salmon mixture evenly into the dishes. Spread a layer of mash on top and add small bits of the remaining butter. Arrange the pies on a baking tray and bake for 20 minutes or until they are golden and the filling is fully cooked. Enjoy!
