Ingredients:
  • 700g beef short ribs
  • 1L water
  • 28.80 gm salt
  • 3 cloves garlic
  • 1 stalk lemongrass, bruised
  • 1 tsp galangal powder
  • 3cm ginger, sliced
  • 2 peaces star anise
  • 100.00 ml Sweet Soy Sauce Kecap Manis
  • 143.00 gm honey
  • 3 cloves garlic, grated
  • 2 tsp ginger, grated
  • 20.00 ml chilli powder
  • 24.40 gm oyster sauce
  • 1 tsp white pepper
  • 40.00 ml tomato puree
  • 21.00 gm soy sauce
  • 60.00 ml apple cider / white wine vinegar
  • 36.80 gm oil
Instructions:
  • In a large pot, marinate ribs in brine for 2 hours. Bring to a boil, then simmer for 1 hour until meat is tender. Allow to cool before removing the ribs.
  • Combine the marinade ingredients in a large bowl, ensuring each rib is thoroughly coated with the mixture.
  • Grill the ribs on a hot griddle pan or barbecue for 5 minutes on each side until the marinade caramelizes, remembering to baste while grilling.
  • Allow the ribs to rest for 5 minutes before serving.
