Indonesian vegetarian skewers recipe

Elevate your BBQ veggies with flavorful skewers and a delicious dipping sauce.
Ingredients:
  • 200.00ml Sweet Soy Sauce
  • 1 tsp garlic powder
  • 10.60 gm soy sauce
  • 9.00 gm sugar
  • 40.00 ml tamarind puree
  • ½ tbsp Original Chilli Sauce
  • 1 green shallot, finely chopped
  • ½ tsp salt
  • 20.00 ml peanuts, crushed
  • 24.00 gm sesame seeds, toasted, ground
  • 2 small eggplants, thickly sliced
  • 1 zucchini, thickly sliced
  • Olive oil, to greaseCrushed peanuts, to serve(optional)
Instructions:
  • In a large bowl, mix together sweet soy sauce, garlic powder, soy sauce, sugar, and tamarind puree. Add eggplant and zucchini, toss to coat evenly, and let it marinate for 1 hour. Enjoy the flavors developing!
  • Prepare the dipping sauce by mixing together sweet soy sauce, chili sauce, shallot, salt, peanuts, and sesame seeds in a separate large bowl. Set it aside for later.
  • Skewer the eggplant and zucchini onto 12 metal or presoaked bamboo skewers.
  • Heat up a barbecue grill or chargrill pan on high. Brush the grill with oil. Grill the skewers for 15 minutes, while turning and basting occasionally.
  • Present skewers alongside a delectable dipping sauce and a sprinkle of crushed peanuts, if desired.
