Grilled chicken marinated in savory soy sauce, topped with irresistible peanut sauce.
Ingredients:
  • 3 tablespoons soy sauce
  • 3 tablespoons tomato sauce
  • 1 tablespoon peanut oil
  • 2 cloves garlic, peeled and minced
  • 1 pinch ground black pepper
  • 1 pinch ground cumin
  • 6 skinless, boneless chicken breast halves - cubed
  • 1 tablespoon vegetable oil
  • 0.25 cup minced onion
  • 1 clove garlic, peeled and minced
  • 1 cup water
  • 0.5 cup chunky peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons white sugar

Instructions:
  • Combine soy sauce, tomato sauce, peanut oil, garlic, black pepper, and cumin in a bowl. Add chicken, stir to coat, cover, and refrigerate for at least 15 minutes (avoid marinating overnight to prevent darkening the meat).
  • Heat the grill on high.
  • In a saucepan over medium heat, saute the onion and garlic in vegetable oil until lightly browned. Add water, peanut butter, soy sauce, and sugar. Cook and stir until smooth. Remove from heat, stir in lemon juice, and set aside.
  • Prepare the grill grate by lightly oiling it. Skewer the chicken and remove excess marinade. Grill for about 5 minutes on each side, until chicken is cooked through. Serve alongside the delicious peanut sauce.
