Succulent chicken burgers with sauteed onions nestled in fluffy homemade biscuits - a tasty twist on classic burgers!
Ingredients:
  • 1 pound ground chicken
  • 0.75 cup bread crumbs
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 2 tablespoons olive oil
  • 0.5 cup sliced onions
  • 2.25 cups all-purpose flour
  • 1 tablespoon baking soda
  • 1 tablespoon white sugar
  • 2 tablespoons chopped fresh chives
  • 0.5 cup vegetable shortening
  • 1 cup low-fat milk
  • 1 cup shredded mozzarella cheese
Instructions:
  • Mix together ground chicken, breadcrumbs, egg, Worcestershire sauce, parsley, garlic powder, and kosher salt by hand. Shape into 5 patties, each measuring 3 inches across and 1 inch thick.
  • In a skillet over medium heat, heat oil. Cook patties until browned, about 5 minutes. Flip and add onions. Cook until patties are browned on the second side and onions are tender, about 5 minutes. Use an instant-read thermometer to ensure the patties reach 165°F (74°C).
  • Preheat your oven to a toasty 425 degrees F (220 degrees C).
  • Combine flour, baking soda, sugar, and salt in a bowl, then mix in chives. Cut in shortening until crumbly. Slowly add milk while stirring until dough forms and pulls away from the bowl.
  • Transfer the dough onto a floured surface and knead for 2 minutes, then flatten it to a 1-inch thickness. Use a round cookie cutter or juice glass to cut out individual biscuits by pressing straight down and lifting straight up to keep them light and fluffy while baking. Place the biscuits on a baking sheet.
  • Bake until golden brown, approximately 13 minutes in the preheated oven.
  • Split biscuits, add burger to bottom half, layer with onion and mozzarella, then sandwich with top half of biscuit.
