Grilled Chicken Salad Cosmopolitan

Inspired by a Cosmopolitan cocktail, this vibrant chicken salad marinates chicken in a zesty cranberry-citrus mix and dresses it with the same flavors. Light, flavorful, and satisfying, perfect for an indoor grill too.
Ingredients:
  • 0.25 cup jellied cranberry sauce
  • 0.25 cup orange marmalade
  • 0.25 cup fresh lime juice
  • 0.25 cup fresh orange juice
  • 0.25 cup vegetable oil
  • 2 tablespoons lemon flavored vodka
  • 4 skinless, boneless chicken breast halves
  • 0.75 teaspoon lemon pepper
  • 1 (10 ounce) bag European blend salad greens
  • 0.5 cup dried cranberries
  • 2 cups diced orange segments
  • 2 tablespoons orange zest strips
Instructions:
  • Combine cranberry sauce and orange marmalade in a saucepan over low heat until melted and well blended. Stir in lime juice, orange juice, and vegetable oil. Reserve 1/2 cup of the mixture in the refrigerator for later use.
  • Let the mixture cool. Stir in the lemon vodka and place in a large resealable bag. Season chicken pieces with salt and lemon pepper, then add them to the bag with the marinade. Seal the bag and refrigerate for at least 1 hour, turning occasionally.
  • Preheat the grill to medium heat. Take the chicken out of the plastic bag, and discard the marinade.
  • Grill the chicken pieces until they are firm, no longer pink in the center, and reach an internal temperature of 160°F (70°C), about 4-5 minutes per side. Let the grilled chicken rest on a cutting board for 5 minutes before serving.
  • As the chicken rests, mix together salad greens, cranberries, and orange segments. Drizzle the citrus marinade over the salad and gently toss to coat. Plate the salad on four dishes. Cut each chicken piece into 1/2-inch strips and place on top of the salads. Finish by sprinkling orange zest strips over the salads.
