Grilled Chicken Salad

Smoky grilled chicken boosts flavor in our zesty chicken salad with Greek yogurt, enchilada sauce, and green chiles.
Ingredients:
  • Black pepper
  • Kosher salt
  • 2 large boneless and skinless chicken breasts
  • 2 tablespoons grapeseed oil
  • 3/4 cup wholemilk Greek yogurt
  • 5 tablespoons from 1 can (10 oz) Old El Paso™ Mild Green Chile Enchilada Sauce
  • 1 tablespoon from 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 3 stalks of celery
  • 3 large green onions
  • Butter lettuce leafs or flour tortillas
Instructions:
  • Heat up the grill on high.
  • Drizzle grapeseed oil over the chicken breasts and season with salt and pepper for a flavorful coating.
  • Grill the chicken until cooked through, about 10 - 15 minutes per side, until no longer pink with clear juices.
  • Take the grilled chicken off the grill and let it cool to a manageable temperature.
  • Dice the celery and green onions small while the chicken grills.
  • Combine yogurt, enchilada sauce, chopped chili, celery, and green onions in a small mixing bowl. Mix well and season with salt and pepper to your liking.
  • After the chicken has cooled, chop it into small pieces, resulting in approximately 4 cups of meat, and transfer to a spacious mixing bowl.
  • Pour in the creamy and tangy yogurt dressing, then gently swirl it into the dish until well incorporated.
  • Enjoy with crisp lettuce leaf cups or soft flour tortillas.
