Indoor BBQ chicken with mesquite flavor, slow-roasted in the oven. Customize sauce with chili pepper for extra kick. Experiment with different meats.
Ingredients:
  • 1 pound hardwood chips
  • 1.5 cups ketchup
  • 0.5 cup brown sugar
  • 1 (12 fluid ounce) can or bottle beer
  • 0.25 cup distilled white vinegar
  • 0.5 cup red wine
  • 0.5 medium onion, diced
  • 1 cup diced green bell pepper
  • 1 tablespoon black pepper
  • 1 (4 pound) whole chicken, cut into 4 pieces
Instructions:
  • Soak wood chips in warm water for 2 to 3 hours to enhance their smoky flavor.
  • Preheat your oven to 350°F (175°C).
  • Combine ketchup, brown sugar, beer, vinegar, and wine in a small saucepan. Add in onion, bell pepper, and black pepper. Simmer mixture until thickened, about 10 minutes.
  • Evenly spread moistened wood chips in the bottom of a broiler pan. Place broiler pan grate on top and arrange chicken pieces. Coat chicken with sauce and cook for around 1 hour, basting regularly.
  • Simmer the leftover sauce in a small saucepan over medium heat to create a flavorful dipping sauce for serving.
