Crispy oven-baked BBQ chicken drumsticks, perfect for feeding a family or a crowd. Ready in just an hour with any BBQ sauce!
Ingredients:
  • 2 pounds (skin-on, bone-in) chicken drumsticks
  • 1 teaspoon salt
  • 1/2 cup barbecue sauce (any tomato- or mustard-based sauce), divided
  • 1 teaspoon liquid smoke (optional)
Instructions:
  • Prepare the chicken marinade: Place the chicken legs in a shallow dish and season both sides with salt. If adding liquid smoke, combine it with the barbecue sauce. Thoroughly coat the chicken legs with 1/4 cup of the sauce, saving the remainder. Cover and refrigerate for at least 30 minutes or up to 8 hours.
  • Prepare the chicken: Preheat the broiler to high and place a rack a few inches below. Line a baking sheet with aluminum foil and place a metal cooling rack inside. Arrange the marinated chicken legs on the rack with some space between each leg.
  • Broil the chicken until dark brown charred spots appear on one side for 5 to 7 minutes. Flip and sear the second side until browned, about 3 to 5 minutes.
  • Preheat the oven to 350°F and move the rack to the middle position.
  • Coat the chicken with most of the remaining sauce, then bake for 15 minutes. Flip the chicken, brush with the rest of the sauce as necessary, and bake until it reaches 165°F, about 15-20 more minutes.
  • Presentation: Serve the piping hot chicken immediately, accompanied by a side of additional barbecue sauce for dipping.
