Delicious sushi, whether traditional or inside-out, never disappoints.
Ingredients:
  • 200.00 gm sushi rice
  • 32.50 gm sushi seasoning (see note)
  • 2 nori sheets, halved
  • 12.00 gm sesame seeds, toasted
  • 12.00 gm black sesame seeds, toasted
  • 20.00 ml wasabi paste
  • 250.00 ml shredded barbecued chicken
  • 1 small avocado, cut into strips
  • 1 large red capsicum, cut into strips
Instructions:
  • Rinse the rice thoroughly under running water until the water runs clear. Allow the rice to drain in a strainer for 10 minutes.
  • In a saucepan, combine rice and 1 cup of cold water over medium heat. Bring to a boil while covered, then reduce heat to low and simmer for 12 minutes until rice absorbs water. Remove from heat, let stand covered for 10 minutes. Transfer rice to a large ceramic dish. Using a plastic spatula, gently stir to break up lumps. Slowly incorporate seasoning by lifting and turning the rice until it cools down.
  • Lay 1 sheet of nori on sushi mat. Evenly spread 1/4 of the rice over the nori using damp fingers. Sprinkle the rice with 1/4 of the sesame mixture.
  • Place a sheet of plastic wrap over the rice. Flip the sushi mat so that the seaweed side is facing up. Transfer the plastic-covered rice onto the mat with the seaweed side facing up. Gently spread a small amount of wasabi paste along the center of the seaweed. Layer evenly 1/4 portion of the chicken, avocado, and capsicum on top of the wasabi. Use the mat to tightly roll up the ingredients into a roll shape. Carefully unroll the mat while keeping the plastic wrap intact.
  • Slice the roll into 8 pieces, discarding the plastic. Repeat with the rest of the ingredients to make a total of 32 pieces. Serve and enjoy!
