Instant Pot® Beef Stroganoff

Instant Pot Beef Stroganoff: A comforting classic with tender beef, earthy mushrooms, and creamy sauce, made fast and easy.
Ingredients:
  • 1/4 cup butter
  • 2 lb boneless beef sirloin steak, cut in thin strips, patted dry
  • 1 cup chopped onions
  • 8 oz fresh white mushrooms, thinly sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cloves garlic, finely chopped
  • 1 cup Progresso™ beef flavored broth (from 32-oz carton)
  • 1 can (10.5 oz) condensed mushroom soup
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 4 oz cream cheese (from 8-oz package), cubed
  • 1/2 cup sour cream
  • 8 cups hot cooked egg noodles
Instructions:
  • Choose the SAUTE setting on a 6-quart Instant Pot® and adjust to normal. Melt butter in the pot, then add half of the beef strips. Sear for 6 to 8 minutes until just browned, turning once. Use a slotted spoon to transfer to a medium bowl. Repeat with the remaining beef, then add onions, mushrooms, salt, and pepper to the pot. Cook for 8 to 10 minutes until softened and browned. Add garlic and broth, stirring constantly until simmering. Finally, mix in the soup and beef, then press CANCEL.
  • Lock lid in place and position pressure valve to SEALING. Choose the MANUAL setting and pressure cook on high for 2 minutes. Turn off the cooker by selecting CANCEL. Move the pressure valve to VENTING for a quick-release of pressure.
  • Combine cornstarch and water in a small bowl and whisk. Set Instant Pot to SAUTE mode and adjust to normal heat. Pour the mixture into the pot and bring to a boil. Cook and stir for 1 to 2 minutes until thickened. Turn off the Instant Pot.
  • Incorporate cream cheese into beef mixture until smooth. Mix in sour cream until fully combined. Serve over noodles.
