Savory beef and mushroom stew, warming winter comfort in a bowl.
Ingredients:
  • 2 tablespoons arrowroot powder
  • 0.5 teaspoon granulated garlic
  • 0.5 teaspoon granulated onion
  • 0.5 teaspoon salt
  • 0.5 teaspoon Italian seasoning (such as Trader Joe's® 21 Seasoning Salute)
  • 1 pound beef stew meat
  • 1 tablespoon salted butter
  • 1 tablespoon extra-virgin olive oil
  • 1 (8 ounce) package white mushrooms, quartered
  • 1 (8 ounce) package portobello mushrooms, quartered
  • 0.75 cup beef broth
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons tomato powder
  • 1 teaspoon arrowroot powder
Instructions:
  • In a quart-sized resealable bag, mix together 2 tablespoons of arrowroot powder, garlic, onion, salt, and seasoning. Add beef stew meat and shake well to ensure even coating.
  • - Preheat a multi-functional pressure cooker like an Instant Pot® on Saute mode. Add butter and olive oil, then heat them up. Brown the meat on all sides in batches if needed, for 5 to 10 minutes each. Stir in mushrooms. Pour in beef broth, vinegar, and tomato powder. Turn off Saute mode.
  • Securely seal the lid and set the pressure to high following the manufacturer's guidelines. Set the timer for 12 minutes and patiently wait for the pressure to build, which should take around 10 to 15 minutes.
  • Follow manufacturer's instructions for natural-release method for about 20 minutes. Then, carefully release remaining pressure using the quick-release method for about 5 minutes. Finally, unlock and remove the lid.
  • Take 1/4 cup of liquid and pour it into a small bowl. Add 1 teaspoon of arrowroot powder and mix well until it forms a slurry. Pour the slurry into the pot and stir it in. Use the Saute function and cook until the liquid starts to thicken, which should take about 3 to 5 minutes.
