Instant Pot® Buffalo chicken pasta - creamy, cheesy family favorite.
Ingredients:
  • 2 tablespoons salted butter
  • 1.5 pounds skinless, boneless chicken breast, cut in bite-sized pieces
  • 0.5 medium onion, finely chopped
  • 3.5 cups chicken stock
  • 1 (16 ounce) package penne pasta
  • 0.5 teaspoon salt
  • 0.25 teaspoon garlic powder
  • 1 (8 ounce) package cream cheese, cubed
  • 0.33333334326744 cup Buffalo wing sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons crumbled blue cheese, or to taste
Instructions:
  • Preheat Instant Pot® on Saute mode and melt butter. Cook chicken and onion in the butter until chicken is browned, approximately 5 minutes. Turn off Saute mode and set aside the chicken-onion mixture using a slotted spoon.
  • Pour in rich and flavorful chicken stock, using a wooden or plastic spoon to release any delicious, caramelized tidbits from the pot. Next, sprinkle in penne, salt, and aromatic garlic powder. Layer on top, without mixing, creamy cubes of cream cheese, savory chicken-onion mix, and zesty Buffalo sauce.
  • Secure the lid by closing and locking it. Choose the high pressure setting as per the manufacturer's directions, then set the timer for 5 minutes. It will take around 12 minutes for the pressure to build up.
  • Carefully release pressure using the quick-release method following the manufacturer's guidelines for about 5 minutes. Then, unlock and remove the lid.
  • Add the mozzarella cheese to the pot and stir until it completely blends with the cream cheese sauce. Allow the pasta to sit in the pot until the sauce thickens, approximately 3 minutes.
  • Top each serving with crumbles of tangy blue cheese for a burst of flavor.
