Easy Instant Pot chicken mole tacos using bottled mole sauce for quick, flavorful meal.
Ingredients:
  • 1 avocado, diced
  • 0.25 cup vegetable oil
  • 2 tomatillos, diced
  • 1 tomato, diced
  • 1 onion, finely diced
  • 5 cloves garlic, minced
  • 1.25 cups prepared mole sauce
  • 0.33333334326744 cup chicken broth
  • 2 pounds skinless, boneless chicken breast halves
  • 8 (6 inch) corn tortillas
  • 0.5 cup black beans - rinsed, drained, and warmed
  • 0.5 cup shredded lettuce, or to taste
  • 0.125 cup crumbled queso fresco, or to taste
Instructions:
  • Preheat your Instant Pot® using the Saute function. Heat vegetable oil in the pot and saute tomatillos, tomato, onion, and garlic until slightly browned, about 5 to 7 minutes, stirring occasionally.
  • Combine mole sauce and chicken broth in the pot, gently nestle chicken breasts into the sauce without stirring. Turn off Saute mode. Secure Instant Pot® lid, seal vent, and set to high pressure for 10 minutes following manufacturer's instructions. Allow pressure to build for 10 to 15 minutes.
  • Allow the pressure to release naturally for 15 to 20 minutes following the manufacturer's guidelines. Then, unlock and remove the lid.
  • Place the cooked chicken breasts in a serving bowl and use 2 forks to shred them. Drizzle the sauce mixture over the shredded chicken. Enjoy with tortillas, black beans, lettuce, queso fresco, and avocado.
