Mouthwatering Instant Pot® Greek chicken with Kalamata olives, artichoke hearts, onion, and savory feta cheese.
Ingredients:
  • 2 tablespoons avocado oil
  • 6 cloves roasted garlic, mashed
  • 2 pounds skinless, boneless chicken breasts
  • 1 tablespoon garlic and herb seasoning, or more to taste
  • 0.5 teaspoon garlic salt
  • 0.25 teaspoon ground black pepper
  • 1 (8 ounce) jar marinated artichoke hearts, drained
  • 1 cup sliced Kalamata olives
  • 0.5 medium red onion, sliced
  • 0.5 (16 fl oz) bottle Greek salad dressing
  • 1 tablespoon arrowroot starch, or as needed
  • 1 (4 ounce) package crumbled feta cheese
Instructions:
  • Choose the Saute function on your electric pressure cooker. Add oil and roasted garlic to the pot; cook and stir until fragrant, approximately 1 minute.
  • Season one side of the chicken breasts with half of the garlic and herb seasoning, garlic salt, and black pepper. Place the chicken in the pot, seasoned side down, and cook until browned for about 2 minutes. Season the top with the remaining garlic and herb seasoning, garlic salt, and black pepper. Flip the chicken and cook until the other side is browned for about 2 minutes.
  • Layer the artichoke hearts and olives around the chicken in the pot, ensuring they fill any empty spaces underneath and on top of the chicken. Sprinkle with red onion and generously pour the dressing over the chicken.
  • Secure the lid and set the cooker to high pressure as per the manufacturer's instructions. Cook for 15 minutes, allowing 10 to 15 minutes for pressure to build.
  • Carefully quick-release pressure following manufacturer's instructions for about 5 minutes. Unlock and remove the lid.
  • Take the chicken out of the pot. Whisk arrowroot starch into the liquid in the pot until smooth. Put the chicken back in. Let the sauce thicken for around 3 minutes. Sprinkle with more salt and pepper, then add a generous topping of feta cheese.
