Whip up a flavorful Instant Pot chicken chili using pantry staples for a satisfying meal.
Ingredients:
  • 2 pounds skinless, boneless chicken breasts
  • 1 (16 ounce) jar green salsa (such as Herdez®), divided
  • 2 (32 ounce) containers chicken broth, divided
  • 2 (15 ounce) cans cannellini beans, drained and rinsed
  • 2 (4 ounce) cans chopped green chilies
  • 1 teaspoon ground cumin, or to taste
  • 0.25 teaspoon cayenne pepper, or to taste
  • 1 (14.5 ounce) package tortilla chips, crumbled
  • 1 cup sour cream, or as needed
  • 1 cup shredded Cheddar cheese, or as needed
  • 1 bunch chopped fresh cilantro
Instructions:
  • In a multi-functional pressure cooker (such as Instant Pot), coat the chicken with half of the salsa and pour in 1 cup of broth. Seal the lid, select Manual pressure, and set the timer for 12 minutes. Let the pressure build for 10 to 15 minutes.
  • After the pressure is released, gently unlock and remove the lid following the manufacturer's guidelines. Transfer the chicken to a bowl and use a fork to shred it. Put the shredded chicken back into the pot.
  • Combine the rest of the salsa, broth, cannellini beans, green chiles, cumin, and cayenne pepper with the chicken in the pot. Lock the lid securely. Select Manual pressure and adjust the timer to 30 minutes. Let the pressure build for 10 to 15 minutes.
  • Carefully quick-release pressure following the manufacturer's guidelines for about 5 minutes. Unlock and take off the lid.
  • Garnish the chili servings with crumbled tortilla chips, sour cream, Cheddar cheese, and fresh cilantro.
