Easy Instant Pot ground beef Israeli couscous - ideal weeknight meal.
Ingredients:
  • 1 pound extra-lean ground beef
  • 0.5 teaspoon freshly ground black pepper
  • 0.75 cup finely diced onion
  • 1 teaspoon finely minced garlic
  • 1.25 cups chicken broth, divided
  • 1 cup finely diced red bell pepper
  • 1 cup pearl (Israeli) couscous
  • 1 teaspoon dried parsley
  • 1 teaspoon low-sodium soy sauce (such as Bragg®)
  • 1 pinch red pepper flakes, or to taste
  • 1 (5 ounce) package baby spinach
Instructions:
  • Preheat a multi-functional pressure cooker like Instant Pot® using the Saute function. Mix in ground beef, season with salt and pepper, and cook until browned and crumbly, around 5 minutes. Add onions and cook until soft and translucent, about 2 to 3 minutes. Add garlic and cook until fragrant, about 30 seconds.
  • Pour in 1/4 cup of chicken broth to deglaze the pot, letting it cook off for about 3 minutes. Add the remaining 1 cup of chicken broth, red pepper, pearl couscous, parsley, soy sauce, and red pepper flakes. Mix until everything is well combined.
  • Securely seal the lid and set pressure to high as per manufacturer's directions. Set timer for 6 minutes, allowing pressure to build for 10 to 15 minutes.
  • After releasing pressure as per manufacturer's instructions, uncover the pot and add spinach. Stir well, cover the pot loosely, and let it sit for 5 minutes for the couscous to absorb liquid. Finally, taste and add more salt if needed.
