Retro Instant Pot porcupine meatballs: Quick and delicious ground beef and rice meatballs in tasty tomato sauce. 30 minute dinner favorite!
Ingredients:
  • 2 tablespoons olive or vegetable oil
  • 1 medium yellow onion, chopped (reserve half)
  • 2 cloves garlic, minced (reserve half)
  • 1 can (15 ounces) tomato sauce
  • 1/2 cup water
  • 1 tablespoon Worcestershire sauce
  • 1 pound ground beef (85% lean)
  • 1/2 cup long grain rice
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
Instructions:
  • Heat oil in pressure cooker or stovetop cooker, add half of chopped onions and garlic, sauté until onions are softened and translucent, about 5 minutes.
  • Prepare the tomato sauce by gently combining the tomato sauce, Worcestershire sauce, and water until it reaches a simmer.
  • Prepare the meatballs: As the tomato sauce simmers, mix beef, rice, salt, pepper, remaining onions, and garlic in a bowl. Shape into ping-pong ball-sized meatballs (approximately 1 1/2 inches in diameter).
  • Add the meatballs to the pot in a single layer, spoon sauce over each, cover the pressure cooker, set to high pressure for 15 minutes, and allow to come up to pressure. Cook until done, about 25 minutes total.
  • To serve: Release pressure naturally for 20 minutes or perform a quick pressure release by moving the vent to "venting". Serve the meatballs when ready. (For stovetop pressure cookers, do a quick pressure release.)
