Instant Pot® herbed Israeli couscous: versatile and flavorful side or meal base.
Ingredients:
  • 1 tablespoon salted butter
  • 1.25 cups chicken broth
  • 8 ounces pearl (Israeli) couscous
  • 1 teaspoon Greek seasoning (such as Cavender's®), divided
  • 1 teaspoon Tuscan herb olive oil
  • 1 tablespoon basil leaves, cut in thin strips
  • 2 teaspoons minced fresh parsley
  • 1 teaspoon minced fresh rosemary
Instructions:
  • Preheat a multi-functional pressure cooker (such as Instant Pot®) on Saute function. Melt butter, then add chicken broth and couscous. Stir well and switch off Saute mode.
  • Choose high pressure following the manufacturer's guidance. Set the timer for 5 minutes and patiently wait 10 to 15 minutes for the pressure to build up.
  • Carefully release pressure using the quick-release method as per manufacturer's instructions for about 5 minutes. Unlock and remove the lid, then fluff the couscous with a fork.
  • Drizzle olive oil over the couscous, then generously sprinkle Greek seasoning on top. Mix everything together well. Add basil, parsley, and rosemary, and toss to evenly distribute the herbs.
