Instant Pot® Irish Beef Stew

Irish beef stew made easily in an Instant Pot with tender meat, veggies, and flavorful sauce.
Ingredients:
  • 1.5 pounds beef stew meat
  • 1.5 teaspoons garlic salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons flour
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 pounds russet potatoes, scrubbed and cut into 1-inch cubes
  • 2 medium carrots, coarsely chopped
  • 1 medium onion, cut into wedges
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon coconut aminos (soy-free seasoning sauce)
  • 2 teaspoons steak sauce
  • 1 teaspoon browning sauce
  • 1.5 teaspoons dried rosemary
  • 0.5 teaspoon dried thyme
  • 1 teaspoon salt, or to taste
Instructions:
  • In a large bowl, generously season stew meat with garlic salt and pepper. Add flour, toss to coat well, and set aside.
  • Preheat Instant Pot® on Saute mode. Melt 1 tablespoon butter, then add garlic and saute for 1 minute until softened. Add the remaining 1 tablespoon butter and coat the floured meat. Sear the beef without stirring until one side is browned, about 1-3 minutes. Rotate and brown all sides for 5-7 minutes. Pour in beef broth, seal the lid, and set to manual high pressure for 30 minutes. Allow pressure to build for 10-15 minutes.
  • Follow the manufacturer's natural-release method for 10 to 40 minutes. Unlock and lift the lid once pressure has been released.
  • Combine potatoes, carrots, and onion with the beef in the pot. Lock the lid, select manual high pressure, and set the timer for 10 minutes. Let pressure build for 10 to 15 minutes.
  • Carefully release pressure using the quick-release method following the manufacturer's instructions for about 5 minutes. Then unlock and remove the lid.
  • Combine Worcestershire sauce, coconut aminos, steak sauce, browning sauce, rosemary, and thyme in the pot, then stir well. Taste and add salt to season, if desired.
