"Delicious Instant Pot vegetarian Irish stew with rich Guinness stout flavor, ideal for celebrating St. Patrick's Day."
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 (16 ounce) package baby bella mushrooms, quartered
  • 2 cups vegetable broth
  • 1 cup Irish stout beer (such as Guinness®)
  • 3 tablespoons tomato paste
  • 0.5 tablespoon apple cider vinegar
  • 0.5 tablespoon soy sauce
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon brown sugar
  • 0.5 teaspoon garlic powder
  • 1.5 pounds potatoes, peeled and cut into 1-inch pieces
  • 3 medium carrots, peeled and cut into 2-inch pieces
  • 1 large onion, chopped
  • 1 sprig fresh parsley, chopped
Instructions:
  • Preheat your Instant Pot using the Saute function. Heat oil in the pot, then saute mushrooms for 3 minutes. Cancel the Saute function, then add broth and beer, deglazing the pot.
  • Combine tomato paste, vinegar, soy sauce, salt, pepper, brown sugar, and garlic powder until smooth. Add potatoes, carrots, and onion, stirring until well incorporated.
  • Securely seal the lid, ensuring it's locked in place. Choose high pressure as per the manufacturer's guidelines and set the timer for 12 minutes. Wait for the pressure to build, which usually takes 10 to 15 minutes.
  • After natural releasing pressure for 10 minutes as per the manufacturer's instructions, carefully perform a quick release for about 5 minutes. Unlock the lid, stir the dish, and elegantly garnish with fresh parsley.
