Vegetarian Instant Pot soup packed with cabbage, green beans, and assorted veggies.
Ingredients:
  • 1 large onion, chopped
  • 2 large carrots, chopped
  • 3 stalks celery, chopped
  • 4 cloves garlic, chopped
  • 1 small head cabbage, shredded
  • 2 cups 1-inch pieces fresh green beans
  • 1.5 teaspoons kosher salt
  • 6 cups unsalted vegetable stock
  • 1 (15 ounce) can diced tomatoes with basil, garlic, and oregano, undrained
  • 1 (15 ounce) can no-salt-added diced tomatoes, undrained
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Preheat a multi-functional pressure cooker (like Instant Pot) by selecting the Saute function. Heat the pot for 3 minutes. Add oil followed by onion, carrots, celery, and garlic. Saute, stirring frequently, until vegetables are slightly softened, approximately 6 minutes.
  • Combine cabbage, green beans, and salt in the pot. Follow by pouring in the vegetable stock and both cans of tomatoes, ensuring to include their juices. Seal the lid securely. Choose high pressure as per the manufacturer's guidelines and set the timer for 15 minutes. Wait for 10 to 15 minutes for the pressure to build up.
  • Allow the pressure to release naturally following the manufacturer's instructions, for 10 to 40 minutes.
  • Uncover the pot and gently mix in fresh dill and parsley. Serve piping hot.
