Make flavorful Guinness-infused corned beef with veggies in no time using an Instant Pot - a perfect dinner option.
Ingredients:
  • 2 cups water
  • 1 (12 fluid ounce) can or bottle dark beer (such as Guinness®)
  • 1 (3 pound) corned beef brisket with spice packet
  • 1 cup brown sugar
  • 10 medium baby red potatoes, quartered
  • 4 large carrots, peeled and cut into matchstick pieces
  • 1 medium onion, peeled and cut into bite-sized pieces
  • 0.5 head cabbage, coarsely chopped
Instructions:
  • In the Instant Pot, mix water, beer, and garlic then insert the trivet.
  • Coat brisket in brown sugar for a sweet caramelized crust, then place on the trivet. Sprinkle with the included spices before sealing the lid securely.
  • Choose high pressure following the manufacturer's guidelines and program the timer to 90 minutes. Wait for 10 to 15 minutes for the pressure to build up.
  • Carefully quick-release pressure following manufacturer's guidelines for about 5 minutes. Unlock and remove the lid, then transfer brisket to a baking sheet.
  • Wrap the brisket snugly in aluminum foil and allow it to rest for 15 minutes.
  • Once ready, take out the trivet from the pot. Layer potatoes, carrots, onion, and cabbage in the pressure cooker. Seal the lid securely.
  • Follow manufacturer's instructions to select high pressure and set the timer for 5 minutes; then, patiently wait for 10 to 15 minutes for pressure to build.
  • Once the pressure is released following the manufacturer's quick-release method for about 5 minutes, unlock and remove the lid. Serve the vegetables with the rested brisket.
