Tropical chicken dish with pineapple puree, soy sauce, brown sugar, ginger, and garlic.
Ingredients:
  • 0.5 pineapple, peeled and sliced, or as needed
  • 1 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 piece fresh ginger root, minced
  • 2 cloves garlic, minced
  • 2 pounds skinless, boneless chicken breasts, cut into pieces
Instructions:
  • Blend pineapple slices in a high-powered blender, like a Vitamix®, until you have 1/2 cup of smooth pineapple puree.
  • In a multi-functional pressure cooker (such as Instant Pot®), mix together 1/2 cup of pureed pineapple, soy sauce, brown sugar, ginger, and garlic. Place the chicken breast on top. Switch on the Saute function and cook for about 8 minutes, stirring occasionally. Turn off the Saute function. Close and lock the lid. Set to high pressure following the manufacturer's instructions, and set the timer for 10 minutes. Allow the pressure to build for 10 to 15 minutes.
  • Carefully release pressure using the quick-release method following the manufacturer's instructions for about 5 minutes. Then, unlock and remove the lid.
