Transport your tastebuds to childhood Thanksgivings with our upgraded Instant Pot™ Sweet Potato Casserole. Quick prep, minimal cleanup, maximum flavor. Enjoy the sweet potatoes, marshmallows, and spices with ease.
Ingredients:
  • 1 cup water
  • 3 1/2 lb medium sweet potatoes, cut in half crosswise (about 6)
  • 2 tablespoons butter
  • 1/2 cup packed brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla
  • 2 cups miniature marshmallows
Instructions:
  • 1. Fill the 6-quart Instant Pot™ insert with water and place the rack inside. Poke the potatoes all over with a paring knife and place them on the rack. Close the lid, set the pressure valve to SEALING, and cook on high pressure for 15 minutes using the MANUAL setting. 2. Cancel the operation and carefully switch the pressure valve to VENTING for a quick pressure release. 3. Transfer the cooked potatoes to a cutting board, remove the rack, and drain the cooking liquid. Once the potatoes are cool enough to handle, peel them and set aside.
  • Switch the SAUTE setting to normal. Melt butter in the pot, then add brown sugar, salt, cinnamon, and vanilla. Cook for 1 to 2 minutes until the sugar is melted and the mixture is smooth. Stir in the potatoes and cook for another 1 to 2 minutes, stirring constantly until smooth and heated through. Finally, press CANCEL.
  • Sprinkle marshmallows on top and cover for 1 to 2 minutes until they begin to melt.
