Make vibrant vegan apple mango chutney with cinnamon, cardamom, and chili in minutes using your Instant Pot.
Ingredients:
  • 4 cups mango - peeled, seeded and diced
  • 2 cups apples - peeled, cored and chopped
  • 1.25 cups white sugar
  • 1 cup cider vinegar
  • 1 (1 inch) piece fresh ginger root, minced
  • 1 teaspoon sea salt
  • 1 teaspoon paprika
  • 1 teaspoon chili flakes
  • 1 teaspoon cinnamon
  • 4 green cardamom pods
  • 4 whole cloves
  • 0.5 teaspoon ground black pepper
  • 1 bay leaf
Instructions:
  • Place a vibrant mix of mango, apples, sugar, vinegar, ginger, sea salt, paprika, chili flakes, cinnamon, cardamom, cloves, pepper, and bay leaf in your Instant Pot. Seal the lid securely, choose high pressure and set the timer for 12 minutes following the manufacturer's guidelines. Let the pressure naturally build for 10 to 15 minutes.
  • Carefully release pressure using the slow-release method following the manufacturer's instructions for about 10 minutes. Then quick-release the remaining pressure for about 5 minutes. Unlock and remove the lid, then select the Saute function and cook until chutney has thickened, approximately 10 minutes.
  • Allow the mixture to cool fully prior to transferring it into sterilized jars.
