Pressure cooker apple cinnamon steel cut oats: cozy fall breakfast perfection.
Ingredients:
  • For the oats:
  • 2 tablespoons unsalted butter or coconut oil
  • 1 1/2 cups steel cut oats
  • 4 1/2 cups water
  • 1 large Granny smith apple or other firm apple, peeled and diced (about 1 1/2 cups diced)
  • 1/4 cup brown sugar or maple syrup
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon salt
  • For serving:
  • Butter
  • Brown sugar or maple syrup
  • 3/4 cup toasted, chopped nuts (pecans or walnuts)
Instructions:
  • Toast the oats in your electric pressure cooker on the Sauté setting by melting butter and stirring oats for 5 minutes until aromatic and lightly toasted.
  • Pressure cook the oats: Mix water, apple, brown sugar or maple syrup, cinnamon, and salt with oats, ensuring oats are fully covered in the liquid. Close the pressure cooker lid, set pressure release to sealing position, and switch from Sauté program to Manual setting. Cook on high pressure for 12 minutes. (Allow 10 minutes for the pot to pressurize before cooking starts.)
  • After the cooking program ends, allow the pressure to naturally release for a minimum of 10 minutes. Once done, switch the Pressure Release valve to Venting to release any leftover steam. Finally, open the pot and stir the oatmeal to blend in any excess liquid.
  • To serve: Spoon oatmeal into bowls and garnish with butter, brown sugar or maple syrup, and chopped nuts. If the oatmeal thickens, add a splash of milk to adjust consistency. Enjoy any leftovers by reheating a single serving in the microwave for 2-3 minutes until hot. Stir in a splash of milk to freshen it up.
