Instant Pot asparagus soup with creamy Brie cheese - quick and easy!
Ingredients:
  • ½ cup shallots, minced
  • 3 cloves garlic, minced
  • 2 pounds asparagus spears, trimmed and cut into 1” pieces
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 ounces Brie, rind removed
  • 1/2 cup heavy cream
Instructions:
  • Start by heating some oil in a multi-functional pressure cooker on the Saute setting. Saute shallots and garlic for 1 minute without burning. Add asparagus and cook until softened, about 3 to 4 minutes.
  • Add the chicken broth to the pot and season with salt and pepper. Seal the lid securely, set the pressure to high according to the manufacturer's instructions, and program the timer for 5 minutes. Let the pressure build for 10 to 15 minutes.
  • Carefully release pressure using the quick-release method following the manufacturer's instructions for about 5 minutes. Unlock the lid and set aside a few asparagus tops for garnish.
  • Gently fold in Brie pieces to the soup in the Instant Pot. Puree the soup with an immersion blender until luxuriously smooth. Mix in heavy cream. Season with salt and pepper to taste. Serve in bowls and top with reserved asparagus tops for a beautiful finish.
