Instant Pot Basic Cabbage Rolls

"Savory Instant Pot cabbage rolls filled with a blend of pork, veal, beef, onion, and rice, simmered in flavorful tomato sauce for a cozy evening meal."
Ingredients:
  • 1.5 cups water, plus more for soaking
  • 3 pounds head of savoy cabbage
  • 0.5 cup uncooked long grain rice
  • 2 (28 ounce) cans tomato sauce (such as Hunt's®), divided
  • 0.33333334326744 pound ground beef
  • 0.33333334326744 pound ground pork
  • 0.33333334326744 pound ground veal
  • 0.5 cup finely chopped onion
  • 2 large cloves garlic, finely chopped
  • 2 teaspoons salt, divided
  • 1 teaspoon dried parsley
Instructions:
  • Add 1 1/2 cups of water to your Instant Pot and place the trivet inside. Prepare the cabbage by removing tough outer leaves and the core. Sit the cabbage on the trivet, core-side down.
  • Securely close and lock the lid while setting the vent to Sealing. Choose the Manual function following the manufacturer's guidelines and adjust the timer to 9 minutes. Allow 10 to 15 minutes for pressure to build.
  • As cabbage cooks, soak rice in water in a small bowl. Pour 1/3 cup tomato sauce into a large bowl. Combine with beef, pork, veal, onion, garlic, 1 teaspoon salt, parsley, and pepper.
  • Quickly release pressure according to manufacturer's instructions for 5 minutes. Remove lid and transfer cabbage to a plate. Drain pot insert. Stir in remaining tomato sauce and 1 teaspoon salt. Place trivet back in the pot.
  • Rinse rice and mix into the meat; stir well.
  • Gently separate cooked cabbage leaves and trim tough veins. Lay a cabbage leaf down; add 2 tablespoons of meat filling, roll it up while securing the sides. Put the roll on the trivet inside the pot. Repeat with remaining leaves and filling, stacking the first layer one way and the second layer the opposite way. Pour the last can of tomato sauce over the rolls.
  • Secure the lid, activate the Stew/Meat function as per the manufacturer's guidelines, and set the timer for 22 minutes. Give it 10 to 15 minutes to build pressure.
  • Allow pressure to naturally release as instructed by the manufacturer for approximately 10 minutes, then carefully perform a quick pressure release following the manufacturer's instructions for about 5 minutes. Unlock and remove the lid.
