Instant Pot Beef Stew: No need to thaw meat, just dump in frozen and hit start - dinner prep made easy!
Ingredients:
  • 2 cups beef broth
  • 2 tablespoons avocado oil
  • 1 large onion, finely diced
  • 3 cloves garlic, finely chopped
  • 0.25 cup dry red wine
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 teaspoon salt, or to taste
  • 0.5 teaspoon freshly ground black pepper, or to taste
  • 1 tablespoon tomato paste
  • 2 (1 pound) packages cubed beef stew meat, frozen
  • 6 medium carrots, sliced
  • 5 large potatoes, peeled and cut into large cubes
  • 3 stalks celery, sliced
  • 2 tablespoons water
  • 1 tablespoon cornstarch
Instructions:
  • Preheat Instant Pot to Saute function. Add oil. Saute onions and garlic until soft, about 5 minutes. Add wine and cook until reduced by half, 4 to 5 minutes.
  • Combine beef broth, thyme, parsley, oregano, bay leaf, salt, and pepper in the pot. Stir in the tomato paste. Add the frozen meat, carrots, potatoes, and celery. Lock the lid, select Meat/Stew function, and set the timer for 45 minutes. Let the pressure build for 10 to 15 minutes.
  • Follow the manufacturer's instructions to natural-release pressure for about 10 minutes. Then, carefully switch the vent to release any remaining pressure for about 5 minutes before unlocking and removing the lid.
  • Combine water and cornstarch in a small bowl, then gradually pour it into the pot. Press the Saute button and cook the stew until slightly thickened, approximately 3 minutes.
