Instant Pot simplifies beef-stuffed bell peppers for a quick dinner.
Ingredients:
  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 medium onion, diced
  • 1.5 cups water
  • 1 (6 ounce) can tomato paste
  • 1 (1.25 ounce) package taco seasoning mix
  • 4 green bell peppers, tops and seeds removed
Instructions:
  • Drizzle olive oil in the inner liner of a multi-functional electric pressure cooker like Instant Pot. Select Saute function. Sear beef and onion in the fragrant oil until beef is browned and fully cooked, around 5 minutes. Transfer mixture out of the pot and drain off any excess oil.
  • Add the beef and onion back into the pot that is still on Saute mode. Mix in water, tomato paste, and taco seasoning. Simmer the mixture until thickened, which should take 8 to 10 minutes. Fill the bell peppers with the flavorful mixture.
  • Add 1 cup of water to the inner liner, place trivet inside, and arrange stuffed bell peppers on top. Seal the lid and select high pressure following the manufacturer's guidelines. Set the timer for 8 minutes and wait for pressure to build for 10 to 15 minutes.
  • Carefully release pressure using the quick-release method as per the manufacturer's instructions for about 5 minutes. Then, unlock and remove the lid.
