Create a flavorful chicken bone broth using Instant Pot and leftover rotisserie chicken for sippable goodness.
Ingredients:
  • 1 (2 pound) rotisserie chicken carcass
  • 2 medium carrots, cut into thirds
  • 2 stalks celery, cut into thirds
  • 1 medium onion, cut in half
  • 1 bulb garlic, cut in half
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons salt
  • 1 teaspoon whole black peppercorns
  • 1 large bay leaf
  • 10 cups water
Instructions:
  • Place the chicken carcass in a multi-functional pressure cooker like an Instant Pot® and add carrots, celery, onion, garlic, apple cider vinegar, salt, peppercorns, and bay leaf. Pour in water.
  • Securely seal the lid, ensuring it's locked in place. Choose the high-pressure setting as per the manufacturer's guidelines, then program the timer for 180 minutes. Give it 30 minutes for the pressure to build up.
  • Follow the manufacturer's instructions to naturally release pressure for about 30 minutes. Unlock and remove the lid, then let the broth cool for 20 minutes. Strain the liquid through a sieve to remove solids.
  • Store in the refrigerator and use within 3 days for optimal freshness, or store in freezer-safe containers and enjoy within 6 months.
