Quick Instant Pot cranberry sauce saves stovetop space, perfect for holiday dinners.
Ingredients:
  • 1 (12 ounce) package cranberries
  • 0.5 cup orange juice
  • 0.5 cup water
  • 1 piece cinnamon stick
  • 0.25 teaspoon vanilla extract
  • 0.5 cup white sugar, or more as needed
  • 0.5 cup brown sugar
  • 1 pinch salt
  • 2 slices of orange peel, using a peeler
Instructions:
  • In a multi-functional pressure cooker, mix cranberries, orange juice, water, cinnamon stick, and vanilla extract. Close the lid, lock it, then select high pressure and set the timer for 1 minute following the manufacturer's instructions. Let pressure build for about 10 minutes. Once cooking is done, immediately turn off the Instant Pot to prevent the cranberries from overcooking and the skins from breaking.
  • Follow the manufacturer's instructions to naturally release pressure for about 7 minutes. Carefully unlock and remove the lid.
  • Reignite Instant Pot by selecting Sauté function. Combine white sugar and brown sugar with cranberry mixture, stirring until sugar dissolves. Add a pinch of salt for seasoning. Once sugar is fully melted, switch off Instant Pot to prevent overcooking. Taste cranberry sauce and mix in additional sugar, 1 tablespoon at a time, to suit your desired sweetness level.
  • Pour the sauce into a serving dish and garnish with orange peel. Enjoy warm or cold. The cranberry sauce will thicken as it chills.
