Instant Pot Ginger Soy Tilapia: Quick, freezer to table dinner. Steamed tilapia in ginger, mirin, soy sauce.
Ingredients:
  • 3 tablespoons mirin
  • 2 tablespoons water
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons minced ginger
  • Cooking spray
  • 3 frozen tilapia fillets, or other flaky white fish
  • 1 teaspoon sesame oil
  • 1 scallion, thinly sliced on the bias
  • Sesame seeds, for garnish
Instructions:
  • Add the mirin, water, soy sauce, vinegar, and ginger to the pressure cooker. Stir well. Grease a steamer rack and place it in the pot. Arrange the frozen fillets on the rack without overlapping. Close the lid, ensuring the valve is sealed.
  • For fish fillets 1/2-inch thick or less, select the manual setting for 2 minutes on high pressure. For fish thicker than 1/2-inch, choose the manual setting for 3 minutes on high pressure. The Instant Pot will take 6-7 minutes to reach pressure before cooking.
  • After the Instant Pot beeps, carefully release the pressure using the steam vent. Open the lid, remove the fish, which should be opaque and brown-stained from the steaming liquid. To check if the fish is cooked, gently flake it with your finger. If needed, cook it in the Instant Pot liquid on the sauté setting until flaky. Cover with foil to keep warm.
  • Transform the liquid into a flavorful glaze: After removing the fish, set the sauté function to high and boil the liquid until it thickens and becomes sticky like a glaze, about 3 minutes. Be vigilant to prevent burning. Stir in the sesame oil.
  • Serve the fish on plates, drizzle with glaze, and top with scallion greens and sesame seeds for a delightful presentation.
