Instant Pot Lamb Shoulder Chops

Tender, flavorful lamb chops cooked to perfection in just 40 minutes in the Instant Pot.
Ingredients:
  • 2 pounds lamb shoulder chops
  • 1 medium onion, sliced
  • 2 tablespoons garlic, minced
  • 1 cup red wine
  • 1 cup beef consomme
  • 1 sprig chopped fresh rosemary
  • 2 tablespoons water
Instructions:
  • Preheat Instant Pot by selecting Saute function. Season pork chops with salt and pepper while waiting for the pot to heat up.
  • Heat oil in a hot pot. Sear chops for 1 to 2 minutes per side until golden brown, then transfer to a plate. Saute onion and garlic in the same pot until tender, approximately 3 minutes. Deglaze the pot with red wine, scraping up any browned bits, and cook until most of the alcohol evaporates, about 5 minutes. Pour in beef consomme, add rosemary, and return chops to the pot.
  • Securely close and lock the lid, ensuring the vent is set to sealing. Choose high pressure and adjust the timer to 40 minutes. Give it 10 to 15 minutes for pressure to build up.
  • Follow the manufacturer's instructions to natural-release pressure for 15 minutes. Then, carefully quick-release any remaining pressure for about 5 minutes before unlocking and removing the lid.
  • Plate the chops. Use the Saute function on the pot to bring the liquid to a boil. Mix cornstarch and water in a bowl to make a slurry, then add it to the pot. Cook and stir until the sauce thickens, approximately 5 minutes.
  • Add the chops back to the pot and mix well to evenly coat them in the sauce.
