Instant Pot lasagna soup: all the flavors of lasagna with minimal effort for delicious results.
Ingredients:
  • 1 (4 ounce) mild Italian sausage link, casing removed
  • 1 pound ground sirloin
  • 1 tablespoon olive oil
  • 1 cup finely chopped onion
  • 1 tablespoon garlic, minced
  • 1 (32 ounce) can low-sodium chicken broth
  • 24 ounces marinara sauce
  • 8 lasagna noodles, broken into pieces
  • 0.5 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 6 teaspoons grated Parmesan cheese
Instructions:
  • Begin by heating a multi-functional pressure cooker, like an Instant Pot, using the Sauté function. Cook the sausage and ground beef until browned, approximately 5 minutes. Discard any grease and set the meat aside. Drizzle olive oil, ensuring it coats the bottom evenly. Sauté the onion until just softened for about 5 minutes. Add garlic and cook until fragrant for about 1 minute.
  • Add chicken broth to the pot and deglaze by scraping up the flavorful brown bits. Pour in marinara sauce. Add the seasoned meat mixture and stir well. Introduce lasagna noodles, ensuring they are fully covered in sauce. Seal the lid securely and choose high pressure for 3 minutes, following your appliance's guidelines. Let pressure build for 10 to 15 minutes.
  • Release pressure gently following manufacturer's directions for the quick-release method for 5 minutes. Open the lid and taste, adding salt if needed. Serve in bowls and sprinkle each with 1 teaspoon of Parmesan cheese.
