Effortless Instant Pot pinto beans - no soaking needed! Simply toss beans in pressure cooker and enjoy.
Ingredients:
  • 3 slices bacon
  • 4 cups chicken broth
  • 1 pound dried pinto beans, rinsed
  • 1.5 cups water
  • 0.5 cup chopped onions, or to taste
  • 2 green chile peppers
  • 1.25 teaspoons garlic powder
  • 1.25 teaspoons kosher salt
  • 1 teaspoon chili powder
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon paprika
Instructions:
  • Assemble all the ingredients.
  • Preheat a multi-functional pressure cooker, like an Instant Pot, on Sauté mode. Include bacon and cook for 4 to 6 minutes, flipping once.
  • Combine chicken broth, pinto beans, water, onions, chile peppers, garlic powder, salt, chili powder, cumin, and paprika in the pot. Seal the lid securely.
  • Set your pressure cooker to high pressure following the manufacturer's guidelines. Then, set the timer for 45 minutes, allowing 10 to 15 minutes for the pressure to build up.
  • Let the pressure release naturally as per the manufacturer's instructions for 10 to 40 minutes. Then, unlock and remove the lid.
  • Chop the bacon and chile peppers, return them to the pot, and mash the beans with a potato masher until you reach your desired consistency.
