Delicious Instant Pot seafood chowder with haddock, shrimp, scallops, potatoes, carrots, and corn for a flavorful bowl of comfort.
Ingredients:
  • 4 slices bacon, cut into 1-inch pieces
  • 5 cloves garlic, minced
  • 1 medium onion, diced
  • 3 stalks celery, thinly sliced
  • 1 medium carrot, diced
  • 4 medium russet potatoes, peeled and cubed
  • 1 (14 ounce) can whole kernel corn
  • 2 cups vegetable broth
  • 6 (4 ounce) haddock fillets
  • 1 cup uncooked medium shrimp, peeled and deveined
  • 1 cup sea scallops
  • 1 tablespoon chopped fresh thyme
  • 1 pinch red pepper flakes, or to taste
  • 2 tablespoons water
  • 1 cup milk
Instructions:
  • Preheat a multi-functional pressure cooker (like Instant Pot) using the Sauté function. Cook bacon until golden brown for 5 to 7 minutes. Stir in garlic and cook for 30 seconds. Add onion, celery, and carrot. Sauté for 1 to 2 minutes, stirring occasionally. Turn off heat.
  • Arrange potatoes over vegetables, followed by corn. Pour in vegetable broth. Place haddock on top, then add shrimp and scallops. Secure the lid and set to high pressure for 5 minutes following the manufacturer's instructions. Let pressure build for 10-15 minutes.
  • Follow the manufacturer's instructions to naturally release pressure for 10 minutes, then carefully quick-release any remaining pressure for about 5 minutes. Unlock and remove the lid.
  • Opt for the Sauté function and gently mix to separate the fish. Include thyme, red pepper flakes, and ground pepper. Combine cornstarch and water in a measuring cup; stir into chowder and cook until thickened. Incorporate milk and serve hot.
