Pressure-cooked cabbage and bacon create a deliciously savory and sweet side dish in no time with this Instant Pot recipe.
Ingredients:
  • 3 slices bacon, cut into 1/2 inch pieces
  • 0.25 cup butter
  • 1 head cabbage, cored and chopped into 1 1/2-inch pieces
  • 2 cups chicken broth
  • salt and ground black pepper to taste
Instructions:
  • Sauté bacon in a large pressure cooker over medium heat until tender for 4 to 5 minutes. If desired, crisp bacon. Then, add butter and stir until melted.
  • Combine the cabbage with the bacon-butter mixture, pour in the broth, and season with salt and pepper. Toss the cabbage until evenly coated.
  • Once the lid is sealed, place the appropriate regulator on top, and crank up the heat to high. Once the regulator starts rocking or the pressure cooker reaches full pressure, reduce the heat until the regulator rocks gently at 15 pounds per square inch. Cook for 3 minutes.
  • Remove the cooker from heat and follow the quick-release method as per the manufacturer's instructions. Unlock and remove the lid, then transfer the cabbage to a serving plate and enjoy while hot.
