Instant Pot Swiss steak with tomato vegetable sauce for cozy cold nights.
Ingredients:
  • 1.5 pounds bottom round steak, 1 inch thick and trimmed of fat
  • salt and freshly ground black pepper to taste
  • 0.25 cup all-purpose flour
  • 2 tablespoons avocado oil, divided, or as needed
  • 1 green bell pepper, chopped
  • 1 medium onion, chopped
  • 0.5 cup carrot, chopped
  • 0.5 cup chopped celery
  • 2 cloves garlic, finely chopped
  • 0.25 cup Merlot wine
  • 2.75 cups canned chopped Italian-style tomatoes in juice
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 1 teaspoon paprika
Instructions:
  • Pat the steak pieces dry thoroughly using paper towels and then proceed to cut them into four 4-inch pieces. Season generously with salt and freshly ground black pepper.
  • In a shallow bowl, coat the steak with flour, shaking off the excess.
  • Preheat a multi-functional pressure cooker (such as Instant Pot) on the Sauté function. Heat 1 tablespoon of avocado oil until shimmering. Brown steak in batches, about 2 minutes per side. Transfer to a plate and keep warm.
  • Pour the remaining 1 tablespoon of avocado oil into the pot and sauté bell pepper, onion, carrot, and celery until the onion is soft, about 3 to 4 minutes. Add garlic and cook until fragrant, about 1 minute. Deglaze the pot with wine, then add tomatoes, Worcestershire sauce, 1 teaspoon salt, oregano, and paprika. Add the steak back into the pot and push it down into the tomato mixture.
  • Secure the lid tightly. Choose manual pressure as per the manufacturer's guidelines and set the timer for 30 minutes. Let the pressure build for 10 to 15 minutes.
  • Let pressure release naturally following manufacturer's instructions for about 5 minutes. Then carefully open the valve to release any remaining pressure for another 5 minutes. Unlock and remove the lid.
