Instant Pot Venison Roast with creamy potatoes and carrots - tender and quick!
Ingredients:
  • 1 tablespoon olive oil
  • 1 (2 pound) venison roast
  • 2 cups water
  • 1 (1.5 ounce) package beef stew seasoning mix (such as McCormick®)
  • 1 pound baby potatoes (such as Little Potato Company®), halved
  • 1 (8 ounce) package baby carrots
Instructions:
  • Preheat a multi-functional pressure cooker (Instant Pot) on Sauté mode, add olive oil, and heat for 1 minute. Sear venison roast for 2 minutes on each side. Turn off Sauté mode.
  • In a small bowl, combine water and stew seasoning, whisk until dissolved. Pour over roast.
  • Securely seal the lid and set the pressure cooker to High pressure for 120 minutes following the manufacturer's guidelines. Let the pressure cooker build pressure for 10 minutes.
  • Carefully release pressure using the quick-release method following manufacturer's guidelines for about 5 minutes. Subsequently, add potatoes and carrots to the pot and generously coat them with the sauce.
  • Securely seal the lid and set the pressure to High following the manufacturer's guidelines. Adjust the timer to 10 minutes and wait for the pressure to build for 10 minutes.
  • Allow the pressure to release naturally following the manufacturer's directions for approximately 15 minutes, then season with salt and pepper.
