Elevate your baking with a speedy Irish soda bread loaded with juicy raisins and currants.
Ingredients:
  • 1 cup raisins
  • 1 cup dried currants
  • 4 cups all-purpose flour, or more if needed
  • 1 cup white sugar
  • 2 teaspoons salt
  • 1 teaspoon baking soda
  • 1.75 cups buttermilk
Instructions:
  • Preheat your oven to 350°F (175°C) and generously grease a 9-inch cast iron skillet.
  • Soak raisins and currants in hot water. In another bowl, whisk together flour, sugar, salt, and baking soda. Stir in buttermilk until mixture is smooth.
  • Pat dry drained raisins and currants with paper towels. Fold them into the dough. Knead dough on a floured surface until it holds its shape; knead in more flour if too sticky. Shape into a round and place in a prepared cast iron skillet. Cut a cross into the top of the loaf with a sharp knife.
  • Bake in the oven until the loaf is golden brown and a knife comes out clean, approximately 1 hour.
