Delicious Irish soda bread-inspired biscuits with optional raisins and caraway seeds.
Ingredients:
  • 3 cups all purpose flour
  • 1/4 cup to 1/2 cup of sugar (depending on how sweet you want them)
  • 1 teaspoon baking soda
  • 1 teaspoon Kosher salt
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 2 teaspoons caraway seeds*
  • 1/2 to 1 cup of raisins*
  • 1 1/4 cups buttermilk**
Instructions:
  • Preheat your oven to 425°F and generously butter a standard muffin pan.
  • In a large bowl, mix the flour, sugar, baking soda, and salt until well combined.
  • Cut the butter into tablespoon-sized pieces and add them to the bowl of flour. Use your fingers to work the butter into the flour until the mixture resembles coarse meal. Mix in any add-ins like raisins or caraway seeds.
  • Create dough: Make a well in the flour, pour in buttermilk, and gently mix until a slightly sticky dough forms. Adjust consistency with more buttermilk or flour if needed. Avoid over-mixing to allow the leavening process to begin promptly.
  • Portion dough evenly into muffin tin: Divide the dough into 12 equal parts and place each portion into the wells of the muffin tin.
  • Bake the biscuits at 425°F for 12-13 minutes until golden brown. Allow them to cool in the pan for a couple of minutes, then transfer to a rack for a few more minutes. Serve with butter and jam. If you enjoyed the recipe, please leave a rating and comment!
